Mohegan Sun has selected Cubellis, an international architecture, engineering, and interior design firm headquartered in Boston, Massachusetts to manage, design, and build two new restaurants of celebrity chef Bobby Flay.

Cubellis was chosen by the Mohegan Tribal Gaming Authority, which owns and operated Mohegan sun, based on their job as architect on the 16,000-sq-ft Jimmy Buffet Margaritaville Restaurant and casino project which opened in September 2008 at Mohegan Sun’s new Casino of the Wind.

“Mohegan Sun has a well-earned reputation for high standards,” said Steve Leone, AIA, Principal, Director of Sustainable Design at Cubellis. “They award projects based on trust and respect, so we are particularly honored that they chose Cubellis.”

Cubellis will provide pre-design, construction documentation and construction administration services for Bar Americain, a 12,000-sq-ft restaurant that is scheduled to open in July 2009 press time and Bobby’s Burger Palace, 4,000-sq-ft with a convenient casual setting. Construction on Bobby’s Burger Palace began in February 2009 and was scheduled for completion late this spring.

Cubellis is also providing demolition services for the existing Casino of the Earth food court which is currently being renovated and will help to modify the restaurant Birches in order to make room for Bobby’s Burger Palace, which will be located next door.
